Momma Cuisine has been getting so much use from the gifts we sent her, she decided to make another fantastic recipe for all of us to try. This time Momma is making Spicy Tomato Basil Shrimp and it looks delicious! When she let us know she was planning on doing a second recipe she couldn’t help but gleefully exclaim, “I’m so in love with every piece you sent. From prepping to serving, it just makes everything look that much more luxurious.” Well, we certainly won’t disagree with that!

Alright, let’s get started with this very tasty dish! Here are the ingredients you will need:
- 3 tablespoons olive oil
- 2 teaspoons red pepper flakes
- 1/2 red onion, diced
- 4 cloves garlic, mined
- 2 teaspoons dried Italian seasoning
- 4-5 Roma tomatoes, diced
- 1 medium zucchini, diced
- 1 teaspoon kosher salt
- 1/4 pound uncooked, medium shrimp, peeled and deveined
- 2 tablespoons sliced basil leaves
Heat a skillet to medium heat with olive oil and add the red chili flakes before the oil becomes hot.
Stir to prevent the pepper flakes from burning and sticking to the pan.
Once the oil has heated up, add the onions and garlic and stir. Cook utill the onions have softened, then add the chopped zucchini and tomatoes. Saute and allow the juices from the tomatoes to create a nice thick sauce.
Add the salt and taste for seasoning.
Then, add the shrimp and stir until the shrimp have turned pink. Add the sliced basil leaves and toss.
Serve with pasta, rice or hot baguettes.
